Gram for gram livers are the most nutrient-dense foods on the planet. Livers from pastured animals are loaded with fat soluble vitamins A, D and K2 and high in iron and other minerals. I started making pâté as a palatable way of eating livers after I came off a vegetarian diet with very low iron levels. Enjoy with vegetable crudities or on quality sourdough or sprouted bread.

SAGE + THYME CHICKEN LIVER PÂTÉ

Ingredients: onions* 45%, livers from pastured chickens* 29%, pastured butter*, red capsicum*, red wine*, garlic*, sage*, thyme*, sea salt, pepper*, parsley*. *Australian certified organic.

FIG CHICKEN LIVER PÂTÉ

The genesis for this flavour pâté came when I turned to my 2 year old one day and said "I'm bored of sage & thyme pâté. I need to make a new flavour. What shall it be?" And she said "fig pâté". She was only 2. I hadn't heard her say that word before and maybe I misheard her entirely but in any event I loved the sweet and savory idea and ran with it. Rehydrated figs are used in this pâté to bring them back to wholefoods. I love the crunchy texture of the fig seeds. With the subtle sweet hint of figs this pâté is a very palatable way of introducing organ meats into one's diet especially with children. Sold frozen.
