The genesis for this product started with a desire to make gluten-free/soy-free breadcrumbs to enjoy a veal or chicken schnitzel! We start with hulled buckwheat groats, activate them to reduce phytates, then dust them with various herbs and savoury spices before going into the dehydrator ovens. Why activated? See here.
